Hearty and Healthy Split Pea Soup

I accept to make a confession. (Shhhh…I don't similar peas.)  I never have and, though I will eat them if served to me or if I serve them every bit a side for our kids, they aren't a vegetable I especially relish. Just keep that in mind when you gyre through this recipe…because fifty-fifty people who don't similar peas tin can LOVE this hearty, succulent, healthy soup!

A few months ago when I wasn't feeling well, my super sweetness sis-in-law brought over this Carve up Pea Soup for our family. I'll acknowledge when Isaw it, information technology didn't look very appetizing. But if someone makes food for me, you better believe I volition consume it and appreciate it regardless of my culinary preferences! And she is notorious for being an fantabulous cook! We fix the table and dished out the soup for the fam (much to the dismay of our children who felt even more doggedly opposed to eating somethinggreenandchunky–their words, non mine).

Just lo and behold, it was love at first bite for my hubby and me. In fact, my husband could not stop complimenting our sister-in-law on the astonishing soup formonths until she finally gave us the recipe. :)  The kids were a bit hesitant at get-go, but quickly concluded that they likewise were fans of the infamous Carve up Pea Soup. The soup is deceptively salubrious…it is so creamy in consistency, that you think information technology must be a cream-based soup. Simply it is actually just the peas expanding and softening during the process of cooking that requite it its creamy texture.

Without further ado, here is the recipe. It is oh-so-perfect for common cold winter days like today and would be equally as perfect for St. Patrick's Solar day!

1. Cook your bacon. I put a slice of parchment paper on a pan and melt information technology in the oven on 400 degrees Fahrenheit until information technology looks crispy plenty for my liking (near fifteen minutes…I like my bacon crispy). :)

ii. Die and sauté your yellowish onion in 1-ii tablespoons butter (or you lot can use olive oil). I like for the edges of the onion to be nice and gilt. Add your minced garlic besides.

3. Peel and cube the murphy.

iv. Measure out your dried split peas. We use one pound (or well-nigh 2 1/iii cups).

5. Dump the peas, tater, and bay leaves into the pot and stir continuously for two minutes.

Oops…I forgot the carrots! I didn't happen to take any regular carrots on hand, and then I simply chopped upward a cup's worth of baby carrots.

Ding! The bacon is done!

6. Add the broth and remaining ingredients and bring to a boil. Cover, reduce the heat to depression, and simmer for 45 minutes. You'll know the soup is done when the peas have softened and the soup has a creamy consistency.

Top with a piffling bacon garnish (because you tin can never have likewise much bacon, correct?!?!).
